Recipe Drop- Cozy Orange Soup

Full of fiber and nutrients, and guaranteed to warm you up, this soup is super easy to throw together during the week- don't have the ingredients? No worries! Use whatever root veggies you have- I haven't found a bad "ix" yet, & pair with some toasted sourdough. And the best part? one pot to clean!

Ingredients:
2 onions, roughly chopped
2 Carrots, peeled and cut into chunks
2 organic sweet potatoes, peeled and cut into chunks
1 small butternut squash, peeled and cut into chunks
6-8 cups water
1 tbsp dry thyme or 2 fresh sprigs
1 tbsp nutmeg
1/3 cup coconut cream (or 1/2 cup soy or coconut milk)
Salt and pepper to taste

Directions:
1). Peel your veggies and cut them into chunks.

2). Add olive oil to a soup pot over medium high heat, add the onions and mix until golden.

3). Add the veggies and sauté for 5 minutes or until golden brown.

4). Season with salt, pepper, garlic powder, nutmeg and cook for another minute. Add the water, put the thyme spring on top, cover, and bring to a boil. Simmer on medium-low for about 30-35 minutes until the veggies are tender. Remove the thyme.

5). Using an immersion blender, blend the soup until nice and smooth. Add your coconut cream or milk and mix until it's all settled.

6). Simmer, uncovered, for another 10 minutes and add more seasoning to taste.

7). Top with cilantro, Greek yogurt, some toasted pumpkin seeds, or whatever else you're feeling!
